Dear Friend of Virginia Wine:
Here it is February, and many of Virginia's wineries are beginning to open their tasting rooms again in anticipation of spring. "Love is in the air" at a number of wineries who will open for special Valentine's Day events. You'll find them listed at the end of the newsletter.
There are two BIG Virginia wine events this month that spotlight the quality and growing popularity of Virginia wines. Plan to attend the Virginia Wine Showcase at the Dulles Expo Center in Chantilly on February 7 and 8 . . . and the Virginia Wine Expo in Richmond beginning February 27 through March 1 at the Greater Richmond Convention Center. You'll have the opportunity to taste hundreds of wines from top Virginia wineries.
If you are a subscriber to Virginia Wine Lover magazine, look for the new Spring issue in your mailbox in early February. If you are not a subscriber yet, you will find the magazine in additional locations around the state . . . in particular at select Virginia ABC stores for the first time. Be sure to pick up a copy!

FOR THE LOVE OF CHOCOLATE & DESSERT WINE PAIRINGS

Well it's the month to celebrate love, and how could we express and experience any more love than in pairing chocolate and wine! Especially Virginia wine!
In the dessert world these days there is so much to choose from - not just a simple piece of chocolate cake or slice of pie. Dessert menus can be very elaborate; something to try and dazzle the diner. So how do you decipher all these complex and creative offerings and then pair your choice with a wine?
I'm going to make this a little easier and focus mainly on dessert wine pairings and chocolate! Our rule of thumb is that in pairing wine with a dessert-- the dessert wine must be sweeter than the dessert. If this is not the case, you may experience the wine tasting sour.
We are lucky to have so many Virginia wineries available to us. I have experimented with some dessert wine productions to pair them with different types of chocolate. Try some of these combinations and let me know what you think, or better yet, come to Adult Chocolate Camp and share the experience with other chocolate and wine lovers!
When you are pairing wine with chocolate you need to follow these simple steps:
1. Take a sip of the wine first 2. Take a piece of chocolate and let the heat of your mouth melt it to cover your tongue 3. Take another sip of wine
If the wine is complimentary to the chocolate, you will discover more flavors, and a bursting of wonderment in both the chocolate and wine.

| ABC STORE WINE SELECTIONS

The Virginia Department of Alcoholic Beverage Control (ABC) is limited to selling only Virginia Wines and there is a fine selection to choose from. Virginia has wineries from east to west, and the variety of grapes and complexity of soils across the state produce a wealth of choices for the wine aficionado. In order to encourage and support the growth of Virginia's Wineries as well as increase revenues to the state, the Virginia Department of Alcoholic Beverage Control is constantly searching for new offerings to feature in the Virginia Wine Category of the state-owned stores.
Proposal & Selection
All products considered for selection at Virginia ABC must first be presented at biannual listings meetings held at the Richmond headquarters. Representatives from Virginia's wineries present their finest vintages to Virginia ABC's Listing Committee and discuss their products' attributes. In order to be included in the listings presentations the winery must qualify as a "farm winery" (be located on a farm in the Commonwealth of Virginia) and must produce its products from 75% Virginia-grown grapes.
At the listing appointment, the winery representative informs the Listings Committee about the wine's specific characteristics. This is an opportunity for the winery to discuss subtleties of their product and how it might compare or contrast to other items already in Virginia ABC's wine selection. The presenter may discuss fermentation; flavoring, aging, bottling, or any other issues that the wineries feel differentiates their product. The Listings Committee, after hearing all the proposals for the entire week of presentations, confers to determine which new items will be included in the product selection for the price list.
If a Virginia winery already has items listed with Virginia ABC, the sales of these items are reviewed to determine the viability of adding additional products from that particular winery. If the Virginia Winery does not have products currently listed with Virginia ABC, it is likely that one or two of their wines will be given an opportunity to prove themselves in a select number of stores, depending on the types of wines that have been submitted for listing consideration. Most wineries do not submit wines that are produced in very small and limited quantities.
Product Placement
Once a product has been accepted for inclusion into the Virginia Wine category, the winery is allowed to select the initial 80 stores they wish to be displayed in. Sales analysis has shown that some stores do not sell wines well enough to support a wine category, so some of the 332 state-owned stores are not included in the selection process. In most cases, the VABC Marketing and Merchandising Department assists the winery in selecting stores based on sales analysis and geographic locations. Marketing and Merchandising produces analysis either by wine type, sales volume, or geographic location, based on the sales strategy the winery wishes to adopt. Many wineries choose high volume wine selling stores, stores geographically near their wineries, stores near large wine festival locations, and stores near any other venues where the winery feels that their target market may be reached. Although Virginia ABC assists in the initial selection, the winery is allowed to make the final choice. Once the 80 stores have been identified, the winery delivers the initial shipment, which is distributed across the selected stores. Virginia ABC's inventory control system receives sales information from the stores daily and monitors stock levels so that stores receive new shipments when on-hand inventory reaches a predetermined level.
Over 250 of Virginia ABC's stores currently maintain a wine department, selecting their products from over 80 active codes available. The size of the individual store's assortment varies from store to store with new codes being added as sales increase or customers make requests. Each new listing offers an opportunity for new products to join the selection.

| GRAYHAVEN WINERY

I recently sat down with Max, Deon, and Chuck Peple of Grayhaven Winery, a small family run winery that is part of the Heart of Virginia Wine Trail in Gum Springs, Virginia. Grayhaven Winery has been in the wine business since 1979, when Virginia wineries were few and far between and grape growing was a matter of trial and error. Read on and enjoy this informative Q&A session with the family behind one of Virginia's oldest operational producers, Grayhaven Winery.
Dezel: Was there one special bottle that initially got you into wine? If so, what was this find?
Max: I was 9 years old the first time I assisted in making wine. My parents drove me and my sister out 30 miles to a large pasture in the country and dropped us off with a couple of plastic trash bags. Our mission was to pick all the dandelions we could fit into the bags so that my folks could try their hand at making dandelion wine. Six months later we popped open a bottle and I got to taste the fruits of my labor. It was horrible. And I don't just mean that because my 9 year old pallet was not yet ready to appreciate wine-it was just bad. My parents had neglected to read the line in the directions that said to remove the stems - this snafu resulted in a bitter taste one might expect from turpentine. Several years later (1978) my family moved out to Goochland County where we would begin our adventures in grape-growing and winemaking. As we were packing up, we found a case of that dandelion wine long relegated to the back of a closet in the basement. We were all feeling brave so we popped a bottle and tried it. The mystery and magic of time had worked wonders and the wine had actually developed into something quite drinkable. I remember the sense of amazement and wonder that something bitter and unpalatable could so transform. That for me will always be my most memorable wine. It serves as a reminder to me to focus on producing good fruit, be reserved in cellar tinkering, and let time do its part.

| THE ENOMATIC WINE SERVING SYSTEMS

Wouldn't it be great if you could always taste a wine before purchasing? No more basing your decision on someone else's suggestion or a winery's reputation. That is the premise behind a new wine dispensing system slowly gaining a foothold in Virginia: The Enomatic Wine Serving Systems. The concept behind this Italian system is quite simple. Each model holds a certain number of wine bottles in a temperature-controlled case and the wines remain fresh for approximately 30-45 days. The wine is dispensed using a pre-paid wine card so that consumers can sample different wines at their own pace. Worried about hygiene? After dispensing the wine, the system automatically cleans the spout. The system is particularly attractive for novice wine consumers who may feel intimidated ordering wine.
Of the four available models, the Enoline is the most popular. This dispenser holds 4 to 8 bottles and the wines can be stored at room temperature, refrigerated or climate controlled. Thus, both red and white wines can be stored. The Enoround model holds 16 wines at room temperature in a circular base and is intended for red wines. The Enomove is a portable system attached to a trolley and the Enomodule is a customized system that can create a continuous line of bottles.
